Quesadilla rellena
Quesadilla is a dish in Mexican cuisine consisting of a tortilla
filled with mostly cheese, sometimes
meat, spices and other fillings,
which are then cooked in a pan or stovetop.
Traditionally,
corn tortillas are used, but it can also be made from
flour tortillas. A complete
Quesadilla is made from two tortillas
with a layer of cheese in the middle. One half is a tortilla filled with cheese and folded into a crescent shape. Quesadilla originated
in colonial Mexico. Quesadilla as a dish has changed
and evolved over the years as people experimented with different variations
of it. Quesadillas are commonly sold in Mexican restaurants around
the world.

In central and southern Mexico, a quesadilla is a flat round piece of boiled corn,
called a tortilla, that is warmed to soften enough to fold in half
and then filled with fillings.
They are
often stuffed with Oaxaca cheese
(queso Oaxaca), a Mexican string
cheese. It is then cooked until the cheese is melted completely. They are often
prepared without adding oil. Typical
serving of quesadilla is with green or red salsa, chopped onions, and guacamole. Although Oaxacan
cheese (or string) is the most common
filling, other ingredients are also
used in addition to cheese or even as
a substitute for cheese.
In some places, quesadillas are also decorated with ingredients other than the existing toppings.
The most common are avocado or guacamole, chopped onions, tomatoes, serrano
pepper, and cilantro.Salsa can also
be added as a topping. Traditional ones are prepared by filling
partially cooked tortillas, then cooking

The raw dough is prepared into small circles, then covered with filling and finally the quesadilla is folded to form the
dough.It is then dipped in hot oil until golden and crispy. Other options include using flour tortillas, especially in northern Mexico.
Wheat flour is often used instead of corn starch.In this case, flour tortillas are cooked, folded and stuffed
with cheese.
